Title: The effect of drying methods on the phytochemical quality of Allium sativum.sp
Abstract:
The presence of medicinal plants is controlled by time and seasons, which requires their conservation, in order to expand their use during the year, as well as their storage and marketing. Our main objective is to study the effect of some conservation methods on garlic, which is widely used in traditional and modern herbal medicine. For this we focused on the phytochemical study of garlic (Allium sativum.sp). Several qualitative and quantitative parameters as well as an analysis of biological activity were studied. Phytochemical screening revealed the presence of a few chemical groups such as saponosides, alkaloids, sterols and terpene and cardiotonic glycosides, while anthraquinones were totally absent in all the extracts. The results obtained by spectroscopic and HPLC analysis showed that the phenolic compounds varies according to the mode of conservation. The evaluation of biological activities shows a very important antioxidant and antibacterial activity in A. Sativum sp.
